Coconut Lime Grilled Pineapple

A zesty treat to awaken your taste buds!

  Ingredients

  • 1 tin pineapple rings
  • 1 cup coconut yogurt or ice cream
  • 1 tablespoon coconut oil (for grilling)
  • 1 tablespoon lime zest
  • 2 tablespoons granulated sugar
  • Juice of 1 lime (to add during grilling)

Garnish

  • Flaked Coconut 
  • Chopped nuts
  • Mint leaves

  Instructions

Prepare the Pineapple:

  • Preheat your grill or grill pan over medium heat.
  • Brush the pineapple slices lightly with coconut oil.
  • Squeeze the lime juice over the pineapple slices just before placing them on the grill.
  • Grill the pineapple for about 3-4 minutes on each side, until it has a nice char and some caramelization. Remove from the grill and set aside.

Make Lime Sugar:

  • In a small bowl, combine the lime zest and granulated sugar. Rub the zest into the sugar with your fingertips to help release the oils.

Assemble:

  • Arrange the grilled pineapple slices on a plate.
  • Top each slice with a generous dollop of coconut yogurt or ice cream.
  • Sprinkle the lime sugar mixture over the top for a bit of crunch and sweetness.
  • Add the flaked coconut and chopped nuts for extra texture.
  • Garnish with fresh mint leaves.
