Ingredients
- 1 tin pineapple rings
- 1 cup coconut yogurt or ice cream
- 1 tablespoon coconut oil (for grilling)
- 1 tablespoon lime zest
- 2 tablespoons granulated sugar
- Juice of 1 lime (to add during grilling)
Garnish
- Flaked Coconut
- Chopped nuts
- Mint leaves
Instructions
Prepare the Pineapple:
- Preheat your grill or grill pan over medium heat.
- Brush the pineapple slices lightly with coconut oil.
- Squeeze the lime juice over the pineapple slices just before placing them on the grill.
- Grill the pineapple for about 3-4 minutes on each side, until it has a nice char and some caramelization. Remove from the grill and set aside.
Make Lime Sugar:
- In a small bowl, combine the lime zest and granulated sugar. Rub the zest into the sugar with your fingertips to help release the oils.
Assemble:
- Arrange the grilled pineapple slices on a plate.
- Top each slice with a generous dollop of coconut yogurt or ice cream.
- Sprinkle the lime sugar mixture over the top for a bit of crunch and sweetness.
- Add the flaked coconut and chopped nuts for extra texture.
- Garnish with fresh mint leaves.
